The story behind the menu

A menu that pushes the boundaries while being the epitome of perpetual excellence and expertly curated by Lettice Events; the UK’s leading luxury sustainable catering company.

Lettice has been at the forefront of innovative catering since 1995. Taking their environmental mission very seriously, Lettice work with their partner Foodsteps, a business dedicated to helping food and businesses reduce their environmental impact.

By looking at the detail of how their menus, cooking practises and events have a cost to the environment and most importantly how they can counter this. Reviewing the CO2e allows Lettice to see the carbon costs as well as the emissions that affect the world, and limit their output by working with small scale, local and artisanal food producers.

Using this data, they are able to fully offset their global impact and are proud to be a Carbon Neutral business.

STARTER

Scottish Smoked Salmon

Sliced smoked salmon, hot smoked salmon belly rillette, white beetroots, horseradish, watercress & Northiam diary crème fraîche.

House cured, sustainably sourced Scottish salmon. To ensure there is no waste, Lettice create a rillette from all the belly trimmings. Served with lightly braised and pickled white beetroots from Sussex, fresh horseradish adds a delicate and surprising piquancy, which pairs beautifully with the wild watercress from the river Test in Hampshire. A perfect celebration of classic British dining with the best of British produce.

Purple Sprouting Broccoli (V)

Barbequed purple sprouting broccoli, stracciatella, sourdough crumb and green sauce.

Immune system boosting sweet broccoli from Barfoots farm in West Sussex is barbequed until tender. Dressed in traditional herb rich, bright green salsa verde and indulgent British made stracciatella from La Lateria – based just down the road from Lettice in South London. La Lateria truly represents surprise and delight, by producing some of the best mozzarella products in the world, but unexpectedly in the heart of London.

MAIN

28 Day Aged Hereford Beef Fillet

Pan roasted fillet, tallow rosti, kale, Roscoff onions and truffle jus.

Using indigenous British rare breeds to support artisanal farmers, and all of the beef fat trim to make a delicious potato rosti. The sweet and delicate pink Roscoff onions are charred to add a bittersweet profile while the use of English winter truffles from Wiltshire adds a luxurious and surprising uplift to the generous main course.

Barbequed Cauliflower (V)

Spiced cauliflower steak, crispy shallots, cauliflower puree, charred red Florence onions, Hasselback potato and preserved wild garlic oil.

A real representation of how Lettice operates – zero waste from any of their products, the centre cut of the cauliflower is lightly spiced and barbequed to add a rich smoky flavour. The florets are turned into a rich puree, and the outer leaves are fried until crispy. Sweet and delicate red Florence onions are grilled to enhance the BBQ feel and the dish is made a vibrant green with hand foraged wild garlic from South London.

Coffee & Dulce de Leche

Dulce de Leche ice cream, burnt coffee meringue, espresso and cocoa crumble.

A wasteless dessert, utilising all aspects of the cocoa bean as well as, antioxidant rich cocoa nibs. All the spent coffee grounds from the event are used to create beautiful richly flavoured coffee meringue, brought together by an indulgent caramel ice cream. All chocolate used in this delightful dessert originates from the Virunga National Park in Congo. Supporting women into work and their family’s access to vital support.

Chocolate delice, cocoa nib crumb & passion fruit sorbet

Beautiful and elegant, this dark chocolate dessert is rich in antioxidants, helping reduce cell damage. To top it off, this dessert is fully vegan, gluten free and nut free, made with a sustainable cream from lentils.

Billecart-Salmon, a 7th-generation champagne house, still hand-harvesting almost all of its grapes, prioritising quality. The NV Reserve is aged on lees for 3 – 4 years, enhancing this special wines luxurious qualities.

The White Wine

Mas de Daumas Gassac, Moulin de Gassac, Languedoc, France 2020

From Mas Dumas Gassac in the Gassac Valley, founded by the Guibert family, has been often referred to as the “First growth of Languedoc”. The blend of Sauvignon Blanc and ancient varietals like Mauzac and Colombard creates a beautiful fresh wine, full of floral and tropical aromas – an ideal aperitif.

The Red Wine

Brouilly, Domaine Cret des Garanches, Beaujolais, France, 2021

From Sylvie Dufait Genin in Brouilly, who farms her 24-acre vineyard biodynamically, favouring horse and cart rather than machines. Her meticulous methods produce a garnet-coloured wine full of black and red fruits, earthy notes, and a balanced spicy finish.
